Directions</h3>
1. In a skillet, heat grape seed oil over medium heat and sauté onions until tender.<br />
2. Add minced garlic and sauté for five additional minutes.<br />
3. Transfer onion and garlic to crock pot, add remainer of main ingredients, except for the chicken, corn and navy beans. Cook on high heat for 1 1/2 hours.<br />
4. Add chicken, corn, navy beans and cook on high heat for another 1 1/2 hours.<br />
5. Prep cheese sauce or skip if using Velveeta (directions below for cheese sauce)<br />
6. Add prepared cheese sauce (or cubed Velveeta) to crock pot and cook on low an additional 30 minutes.<br />
7. During the last 30 minutes, prep tortilla strips (directions below).<br />
8. Gently stir until smooth and serve in bowls.<br />
9. Top the prepared bowl with the prepped fried tortilla strips for garnishing.<br />
10. Sprinkle with the grated colby-jack cheese and serve.<br />

Directions for cheese sauce: </h3>

Into a blender, add the 1/2 c. of chicken broth, sour cream, and the 1/2 lb of mild cheddar cheese (cut cheese into slices for easier blending). Blend on high until smooth. Transfer cheese sauce from blender to a sauce pan. Add crumbled chicken bouillon cubes. Cook on medium heat while continuely stirring so that sauce does not burn or stick. Once you can see that the cheese is melted remove and set aside until needed.<br />

This process is repeated twice. Stack 8 tortillas and cut down the middle. Stack the one half onto other half and cut those in half again. Cut remainer of stacks one more time to make narrow. Season hot frying pan lightly with grape seed oil (olive oil optional). Add the cut tortilla strips to fry pan and lightly mist spray oil over the top of the tortillas, pan fry these while flipping a couple times and lightly mist spray the cut tortillas with oil one more time. 1. Place onions in a 6 quart slow cooker, top with chicken, corn, tomatoes, and broth.<br />
2. Mix barbecue sauce, melted butter, ketchup, worcestershire sauce, liquid smoke, vinegar, celery salt, and dry mustard (add ground pepper to liking). Stir well and pour over ingredients in slow cooker.<br />
3. Cover with lid and cook on high for 90 minutes and then reduce to low setting and cook for 5 hours or until chicken is tender.<br />
4. Remove chicken and shred. Return to slow cooker.<br />

1. Heat olive oil in pan and sauté onions until soft.<br />
2. Add garlic and sauté for two additional minutes.<br />

4. Mix over medium heat for 5 minutes.<br />
5. Pour the mixture into the crockpot.<br />
6. Add chicken.<br />
7. Cook on low for 4 to 6 hours.<br />
8. Remove the chicken and shred with forks.<br />
9. Return to crockpot and add the corn, chile peppers and black beans.<br />
10. Cook for 30 more minutes.<br />
<br />
Serve with a dolip of sour cream and a sprinkle with grated cheddar cheese. Garnish with crushed tortilla chips and avocados.</div>

3 lbs beef roast (top of the round is a preferred choice)<br />
1 1/2 c of your favorite barbecue sauce (<a href="http://largefamilyslowcooker.blogspot.com/2011/01/barbecue-sauce.html">homemade bbq sauce recipe link</a>)<br />
2 large mangos, peeled and thinly cubed<br />
1 1/2 small red onion, very thinly sliced<br />
3/4 c sharp cheddar cheese<br />
3/4 c muenster cheese<br />

3/4 c. corn (optional)<br />
6 whole wheat tortillas or a bag of black corn chips for dipping<br />
tabasco (optional)</p><br />

Directions:</h3>
1. Combine beef and barbecue sauce in slow cooker. Cook on low for 8-10 hours or on high for 6 hours. When done, shred the meat by pulling against the grain of the meat with a fork.<br />

2. To use as a dip, add meat to a serving bowl and layer the mango over the top of the beef mixture, finish off with the cheese and onions. Serve with black corn chips. <br />

Cook potato mixture on low for 5 to 6 hours. Stir well before serving. Garnish on top with broken up small pieces of bacon before serving. </div>

You can substitue red win instead of water. <br />Set slow cooker to low temperature and cook it all day.</div>

<b><span style="color: blue;">Thick and hearty potatoe and ham soup:</span></b><br />

<b><span style="color: blue;">Ingredients:</span></b><br />
· 5 potatoes, chopped<br />
· 2 onions, diced<br />
· 2 c ham, chopped<br />
· 4 c chicken broth <a href="http://largefamilyslowcooker.blogspot.com/2011/02/quick-and-easy-chicken-broth.html">(*click here for the easy chicken broth recipe)</a><br />
· 1 c milk mixed with 2 Tbsp of cornstarch, arrowroot powder, or flour.<br />

<b><span style="color: blue;">Directions:</span></b><br />
1. Put the potatoes, ham, and onions in the slow cooker.<br />
2. Add the chicken broth.<br />
3. Set the slow cooker to High temperature.<br />
4. Cook for 3 hours.<br />
5. To the 1 c of milk, add 2 Tbsp of cornstarch, arrowroot powder, or flour. Stir well so that there are no lumps. Then add to the slow cooker 30 minutes before serving to thicken the broth.</div>
