Cheesy Ham and Potatoe recipe

An easy peasy comfort dish:

Cheesy Ham and Potatoe recipe


Ingredients

4 medium potatoes diced
1 medium onion diced
3 stalks of celery
1 c shredded Cheddar 
1 c shredded Monterey Jack cheese
1 (10.75 oz) can condensed cream of celery soup (no good sub for this yet!~any suggestions, post below)... maybe regular cream of soup mix?
1 (8 oz) container plain smooth & creamy yogurt (any variety or Stony Field has a good organic option)
2 pounds of boneless fully cooked ham that is halved lengthwise
6-8 strips of oven baked bacon (for bacon cooking directions click here)
cooking spray

Directions
Spray the inside of slow cooker with cooking spray to prep.
Combine potatoes, cheddar and monterey jack cheese, cream of celery soup, plain yogurt and place in the slow cooker.
Place ham on top of potato mixture.
Cook potato mixture on low for 5 to 6 hours. Stir well before serving.  Garnish on top with broken  up small pieces of bacon before serving.

  1. what if you added celery or just the leaves into your cream of soup powder? i would think also, for mushrooms, a cream of beef (beef instead of chicken bullion) and diced mushrooms would work

  2. Most cream of something soups are kind of interchangeable. The flavors aren't usually that strong. I don't like celery & my husband doesn't eat mushrooms, so anytime I've needed to use those, I just used cream of chicken. So, when I made up my cream of something mix, I used chicken bouillon instead of beef & have used it in place of any of the cream soups & the flavor is always good. ;) You could always just add celery, mushrooms or onions to whatever dish your making, instead of the soup mix itself. Especially if you're making it in the crockpot.

  3. You can make your own cream of anything soup with a few things you have at home. If you make the dried S.O.S mix you add finely chopped celery to the mix as it cooks. If you have a mandolin slicer with a small julienne blade then you can dice onions or celery very small.
